Siddharth Gogel was born and brought up in Paris but adopted India as his home more than 15 years ago. After years of working as a business development consultant, an afternoon spent at a friends bakery sparked a new excitement in his life. One thing led to another and he took the plunge and decided that Paris Pao would be launched in Goa
"Why did I start a bakery? The short answer is, I loved my life in India, but I was really missing my daily baguettes! After all, the baguette is an iconic symbol of French culture."
"On a more serious note, through my apprenticeship with friends and then work experience in Paris, I quickly understood that making bread was a fine balance of chemistry and intuition... Flour + Water +Yeast + Salt + a curious Baker = Bread. Et voila, I fell in love with the magic! When I had the confidence to set up Paris Pao, there was only one place I wanted to take this leap of faith: Goa. And I am so glad I did... The response, respect and loyalty of the people of Goa has been heart warming and I am excited to continue sharing my love of breads in this Paradise."
The baguettes are baked only to order, proofed for more than 24 hours and have just the right amount of lightness and the perfect chew.
